Secret Ingredient - Part 2

Low Carb Pancakes - These are fantastic.  They have a almond taste, they are really good.  I prefer these to real pancakes because I don't feel bloated and useless after having them.

In a blender combine:
1/2 cup cottage cheese
1/4 c melted butter (I use Fleischmann's w/ olive oil)
1 whole egg
3 egg whites

In a bowl, combine:
1 Tbsp baking powder
3/4 cup almond flower
1 Tbsp Splenda
1 tsp Cinnamon
1/2 tsp Salt
Blender mixture

Cook 1/4 cup of batter on a hot griddle until the center starts to bubble, then flip.  Serve with low carb syrup (sugar free).  Yum!

31-34g protein.

Banana Nut Muffins

Preheat oven to 400F.  Fit 12 muffin cups with liners and coat each liner with cooking spray.
Mix together:
1 1/2 cup flour
1 cup chopped walnuts
1/2 cup toasted wheat germ
1/2 cup brown sugar splenda
1 Tbsp baking powder
1 tsp Cinnamon
1/2 tsp salt
1/4 tsp ground nutmeg
Stir in:
2 mashed ripe bananas
3/4 cup milk (I use almond milk)
5 Tbsp melted butter
1 whole egg

Fill muffin cups with batter and sprinkle with cinnamon and splenda.
Bake 20-22 min and cool for 1 min.  Remove from pan and cool on wire rack.

Stove Top Oatmeal - Dan's favorite Breakfast
In a pot, bring to a boil the following:
3/4 cup water
3/4 cup milk (I use Almond milk)
1 tsp cinnamon.

Once boiling add 1/2 cup old fashioned oats and lower heat to med-low.

Once oats are cooked to your liking (3-5 min) take off heat and add 1/4 cup of walnuts or pecans, 2 Tbsp sugar free syrup, and raisins (optional).
Mix in one scoop of vanilla protein (if you choose not to add protein, only add 1/2 cup of water and 1/2 of milk).
You can also cut up an apple instead of the raisens.  I don't like the texture of apple in the morning. 
Dan likes to add a little splenda or brown sugar splenda for added sweetness.

Mixed Nuts Cookies - These are my favorite.  Even Dan's siblings liked them for Halloween instead of candy!
Preheat oven to 375F.
In a mixing bowl, combine:
3tsp butter (with olive oil)
1 egg
1 Tbsp cinnamon

Add in 2/3 cup crushed pecans, 2/3 cup crushed almonds (I prefer hazelnuts), 2/3 cup crushed walnuts. Add 3 scoops of chocolate or vanilla protein powder.  I prefer chocolate caramel Muscle Milk.

On a baking sheet, scoop out 6 equal portions of the batter.
Bake for 6 min or until you see the butter bubbling from the cookies.
Serve warm or store in the fridge.  I prefer these cookies warm myself.
